- 2 cups cooked white or brown rice
- 3 cups broccoli florets, steamed
- 1 can (10.5 oz) condensed cheddar cheese soup
- 1 cup shredded cheddar cheese (plus extra for topping)
- ½ cup sour cream
- ½ cup milk
- 2 tablespoons butter
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper to taste
- ½ cup crushed Ritz crackers or breadcrumbs (optional topping)
Instructions
1. Preheat & Prep
- Preheat oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with butter or cooking spray.
2. Cook the Rice & Broccoli
- Prepare 2 cups of rice according to package instructions.
- Steam 3 cups of broccoli florets until tender but not mushy.
3. Make the Cheesy Sauce
- In a saucepan, melt butter over medium heat.
- Stir in cheddar cheese soup, milk, sour cream, garlic powder, and onion powder.
- Add 1 cup shredded cheddar cheese and stir until melted.
4. Combine & Bake
- In a large bowl, mix the cooked rice, steamed broccoli, and cheese sauce until well combined.
- Transfer to the prepared baking dish and spread evenly.
- Sprinkle with additional cheese and crushed crackers if desired.
- Bake uncovered for 25–30 minutes, until golden and bubbly.
